Almond butter cookies that are simple, but delicious.
Hi, all! Today’s post is very special to us, because we are participating in OXO’s Bake A Difference campaign to raise awareness and support for Cookies for Kid’s Cancer. Cookies for Kid’s Cancer is a wonderful organization that provides anyone with the support and inspiration to easily get involved in fundraising to find a cure for pediatric cancer. There are so many ways to ‘Be a Good Cookie’, and help to make a difference for children that are suffering, and this campaign is just one way that we were able to ‘Bake a Difference’.
And now onto the recipe, shall we?
I love a good butter cookie. Yes, I actually said that, and yes it is actually true. I know that I may be standing alone here, but I don’t care. Butter cookies are simple, but so so good. Sometimes less is more. They are the perfect cookie to have with coffee in the morning.
Fact: It’s perfectly okay to have cookies for breakfast if you pair them with coffee.
These cookies are so simple and quick to make, and the OXO cookie press makes it even simpler. Can you stand it? Guys, as much as many of you probably still don’t want to admit it, the holiday season is quickly approaching. And you know what that means. COOKIES. Lots and lots of cookies. Cookies for your family, cookies for your friends, cookies for your co-workers (even the ones you don’t like). Pretty soon you’re going to be buried in cookies. If you’re going to go out of your way to make a million cookies, you want something that is quick, but also looks like you put a little bit of effort into them. Right?
The cookie press is great because there are a bunch of different disks to choose from that pair with the different holidays and seasons, so your cookies can have a variety of different designs. Just load the press with cookie dough, and bloop bloop bloop, your fancy little cookies are on the tray and ready to bake! (bloop bloop bloop is my narrative sound of the cookies being pressed onto the tray, sorry).
*If you don’t have a cookie press, you can just roll out the cookie dough and use cookie cutters.
The cookie press makes all of the cookies look perfect and uniform and fancy looking without actually being fancy. (A re-occuring theme on this blog).
I’ve had these cookies in a bag on my kitchen counter for a couple of days now, and they are so small that I just subconsciously grab one every time I go into the kitchen.
**Goes into kitchen to get a glass of water, grabs a cookie, leaves kitchen without ever getting water**
That has been the story of my week so far, and I don’t feel bad about it at all.
I used almond extract because I LOVE almond extract, and I feel like it is very underutilized a lot of the time. Everybody puts almond in the corner. Everything is always vanilla vanilla vanilla all the time, and I wanted to give almond a little bit of love today. So here you go almond. Now is your time to shine.
