If you like Almond Joys, then stick around and keep reading, because things are about to get pretty darn good up in here. These brownies were not the initial plan for this week’s post. However, when you are sitting on the couch with your twin, fully immersed in an episode of ‘Survivor’ and out of nowhere she yells, “Almond Joy brownies!” how do you make anything else? Whatever dessert God possessed Lindsay in that moment did me a favor, because these brownies filled a void in me that apparently only chocolate and coconut could fill. That’s why I ate 4. In a 2 day period. Apparently the void was big. Don’t judge me.
There are so many ways to dress up simple brownies and turn them into something spectacular, and this recipe, by far, is one of my favorites. These brownies lasted about 27 hours in our household before they were completely gone- Leaving nothing but a memory and pants that are a lot harder to button. If you have a favorite brownie recipe that you like to use then by all means use it. And kudos to you for having the ambition to make homemade brownies. Today, we just used a box mix. It saves a lot of time and they are still delicious. If you are bringing these to a party or any event where other humans are present, just tell everyone that they are from scratch. I promise you they won’t be able to tell. And if they question it, just walk away from them. Take EVERY SINGLE BROWNIE and walk away from them. Take that, negative inquisitive person! You don’t deserve my stinkin’ semi-homemade brownies.
The best part about these brownies is that they really do taste like an Almond Joy. They may even be more satisfying than an actual Almond Joy for 2 reasons. 1) You can cut them into ridiculously large pieces, and 2) These brownies don’t have the calorie information conveniently written all over the outside forcing you to be fully aware of your bad decision before you make it. Instead, you can indulge while being blissfully “unaware”of the fact that these brownies will assuredly negate every second of exercise you’ve done so far in 2016.
Now let’s get into this. This recipe is incredibly simple and pretty quick, even if you did decide to make your brownies from scratch. So firstly, prepare your brownies and let them cool completely. While your brownies are cooling you can prepare the coconut-y goodness that will be slathered all over the top. First, you are going to cream together ¼ C softened butter and 8oz of cream cheese until it is smooth and beautiful looking. Then, you are going to add 1 ½ C shredded coconut and 1 teaspoon of vanilla extract and mix again. Lastly, slowly add in 3-4 C of powdered sugar until you reach a desired consistency.
To assemble your brownies, just spread an irrationally large amount of frosting over the top, drizzle with melted milk chocolate, and sprinkle some sliced almonds on top, and you’re done! Now, put on your stretchy pants and go to town because I promise you will not be able to “just have a small bite.” No No, my friend. You are invested in these brownies, and you are going to eat them all. And you are going to love every second of it.
