Do you need a break from all the pumpkin? Are you sick of it yet?? We sure aren’t, however, we figured we should do a non pumpkin recipe for those of you who might not be as pumpkin obsessed. So, hopefully you enjoy apples.
It’s apple season. Apple cheesecake, apple crisp, apple cookies, applesauce, and the mother of all apple foods: Apple pie. Personally, I am not a pie type of person. Given the choice between a chocolatey, fudgy, sugary, stomach ache indusing cake, or a fruity pie, I’m going to choose the stomach ache. Every time. I don’t ever crave pie, I’ve never made a pie, and I don’t normally eat pie. I do love me some apple pie though. Especially if its unrecognizable because there is so much vanilla ice cream on top.
Even though I love apple pie, I have never tried to make it. Pie=scary. I feel like there is a lot of room for things to go horribly, horribly wrong.

These cupcakes are loaded with apples. Then more apples, and even topped with apples, because I got carried away and couldn’t control myself.
The cake itself is an apple cake. There are chunks of apples in the batter! Then, you scoop out the center of the cupcake with a cupcake scooper-outer (Or an apple corer, or a spoon, or your fingers. Whatever)
P.S don’t throw out those insides. EAT THEM!
THEN, you fill that empty hole with apple pie filling! Which is just apples, cinnamon, and butter that you cook on the stove.
The frosting is a brown sugar buttercream that pairs perfectly with the cinnamon of the apples and the cake.
Myself personally, I hate cupcakes with no garnish on them whatsoever. They bug me. In a big way. I feel like all cupcakes need something cute sitting on top. Does it make them taste different? Sometimes. Even, if its just a sprinkle of cinnamon or something, just put it on! I’m all about presentation so a boring cupcake just will not do. I will still eat them, don’t be silly. But, I just prefer that they look as good as possible.
Moral of that story, I garnished these with a sprinkle of cinnamon sugar and then decided that just was not enough. So, I topped them off with some of the extra apple pie filling I had leftover.
In closing, Halloween is soon, which means that Thanksgiving is also soon. And thanksgiving means food. And food means happiness. Think about that and enjoy your day!
