I don’t know about you, but every time I think about birthday cake, my mind automatically goes to funfetti cake. I LOVE cake with sprinkles. I love sprinkles in general. I love the fun touch they add to desserts. These cookies are basically funfetti birthday cake in cookie form, and they are everything I hoped they would be.
These cookies are made with funfetti cake mix, and that is a big part of what makes them so great. I really like making cookies out of cake mix. If you’ve never done it, try it! It’s so easy and it will blow your mind. One of the reasons I love these cookies so much, besides how cute and colorful they are, is their texture. Cake mix cookies are more dense than regular cookies, but they are still soft. I like when my cookies have more of a brownie consistency to them, and that is exactly what these cookies are.
We were experiencing a rainbow sprinkle shortage, so I didn’t have the amount that I wanted for my batter. Clearly I didn’t take inventory before I started baking. STORY OF MY LIFE. As a result, I had to rifle through my sprinkle cabinet and see what else I had. Yes, we actually have a sprinkle cabinet. It’s overflowing and the door barely shuts anymore. Sounds like a problem, but it’s actually the cabinet that dreams are made of. I added a little bit of everything I had to the batter so I had the level of sprinkle action that I wanted, and they came out pretty good! They ended up being about 50% rainbow sprinkles, 50% random bits of whatever else I had. You can add whatever kind of sprinkles you want to these cookies to get the look that you want, I’m just a huge rainbow sprinkle fan. As soon as I took these cookies out of the oven I texted Lindsay “THESE ARE THE CUTEST COOKIES I HAVE EVER MADE EVER”. Like, seriously I love them. The all caps was absolutely necessary.
