These blueberry muffins are sweet, delicious, and super easy to make!
Hello, everyone. It’s Lauren. This post goes out to the kind, sweet soul that cashed me out at the grocery store the other day. Let me explain.
I went to the store on a mission to buy some fruit. Over the weekend I went to a food truck festival and temporarily lost my mind. I ate anything and everything I could get my hands on. I am the cheapest person on the planet, and I refuse to spend more than $20 on anything. It’s the reason I only have 1 pair of sandals that have gotten me through 2, going on 3 summers (thanks, Target), and 1 pair of black work pants that are one lunge away from completely ripping in the crotch. However, put me in front of a food truck and I’m like, yes please take all of my money my bills are not important thanks. Do I regret it? No. Can I fit in my pants anymore? Also no. Therefore, I decided that I would make an effort to try and eat a little bit healthier this week.
While I was at the store I picked up a giant container of strawberries. The largest container of strawberries I have ever seen in my life. (I planned on covering them in Nutella when I got home, but still, it is fruit, which is better than pizza, so back off). When I got to the register, the young lad said to me “You know, if you use a rewards card you can get another container of fruit for free.” It’s like he knew I was trying to repent from a weekend of bad, but oh so good decisions. But.. I don’t have a rewards card, and along with being cheap as hell, I am also impatient and can’t take 60 seconds to sign up for one. “No problem! I’ll let you use mine!” Oh, you kind sweet angel with perfectly quaffed hair, thank you. As a result, I ended up with a giant container of strawberries AND a giant container of blueberries. Work your magic, nutrients! I knew I would rip through that container of strawberries, no problem. However, I knew I could never eat all of those blueberries on my own before they spoiled. (If you read our post on the lemon blueberry bread you’ll know why). Therefore, I decided to make some good old fashioned blueberry muffins! That cashier actually did me a favor. Blueberry muffins have been on my to-do list for weeks now at this point. But for whatever reason, I never got my act together and actually made them. I took this experience as a sign from the universe to just stop procrastinating and make the muffins. Ok, universe, I got it. Thank you.

I love blueberry muffins. They are definitely number one on my muffin list. Yes, I have a muffin list. (Coming in at a close second on that list are the pumpkin cream cheese muffins from a while back).
And these have streusel on them, of course. Don’t be ridiculous. For about half a second I debated making a muffin without streusel just to see what it was like. Then, I snapped myself out of the stroke that I was obviously having, and proceeded to make the topping.
These muffins were perfect because they only used one bowl, and they didn’t require me to mess with the mixer. Don’t get me wrong, I absolutely love my mixer. But sometimes, I just don’t want to be bothered by it. Kind of how I feel about Lindsay sometimes. KIDDING. I’m Kidding.
But really, these muffins are really quick and easy to make. They are perfect to grab for breakfast in the morning when you’re running late, or for a quick snack. You can also use this same recipe and alternate blueberries for chocolate chips if you wanted.
