Hello fellow ice cream lovers. Lindsay here.
I actually went to the gym yesterday. Seriously? What? Why?
Well, in a swift moment of ambition I got myself a gym membership. I’ve had the dumb thing for like a month now and I had only used it once. Therefore, I figured I should probably use it. So I dragged myself there, complaining the whole way and I did the stuff. Let me tell you, I feel it. I hurt. I hurt in places that shouldn’t hurt. Any way I twist or turn results in pain. This must just mean that when I wake up tomorrow I’m going to be jacked and able to open a jar of jelly by myself right? RIGHT?
I only bring this up because I like to complain about things. But also, because nothing makes me crave dessert more than a nice workout at the gym. I just did 3 squats. I deserve dessert.
A couple weeks ago we posted our no-churn blueberry cheesecake ice cream. The same day we made that we also made this no-churn cake batter ice cream! We’ve been waiting to share it with you until the right moment! That moment is now! This tastes just like cake batter! I don’t know about you, but I always eat my cake with ice cream. This cake batter ice cream is like eating the cake and the ice cream together at the same time. Did I mention you don’t need an ice cream maker? Well, you don’t. YAY.
I will say that this ice cream has a little bit of a different texture than regular ice cream. It’s super creamy but also the word “gooey” comes to mind. Gooey in a good way though! Not gooey in a gross, slimy way. You’ll like it. It tastes good.
The main reason this tastes like cake batter is because it actually has some funfetti cake mix in it. Imagine those delicious funfetti cupcakes your mom used to make for your class when it was your birthday. Now imagine that in ice cream form. THAT’S WHAT THIS ICE CREAM IS! Just to spice it up and add even more color, we added some colorful sprinkles and frosted animal cookies. All optional of course. But why would you not add them?!
