When life gives you lemons, make lemonade. When your lemons die before you get the chance to use them, hence ruining your lemon dreams, use lemon cake mix for your cookies.
Happy Friday, everyone! It’s Lauren. Hello. I don’t know about you, but this has been the week that never ends. Every day felt like a Monday, and no amount of coffee helped to change that. And trust me, there was A LOT of coffee involved. I am currently drinking coffee out of a thermos (that is full to capacity) that is the length of my forearm, and I still feel like a dead person. Why is it that we wake up every single day of our lives, but it never actually gets any easier? These are the questions that haunt me. Anyway, today we are going to talk about lemons.
Lemons sometimes get a bad rap. You know? A lot of people turn their nose up at lemons because of their tartness. They think lemons=sour=yuck. We used to be those people. Unless it is presented to me in the form of lemonade with a cavity inducing amount of sugar on the side, I don’t want it.
However, in our attempt to be more adventurous in the kitchen, we have begun to experiment more with ingredients that we normally would run away from. Because, why not? Be brave! Try new things! Ra! Turns out, lemons are fricken delicious, and they have sneakily crept their way into my heart.
If you have visited our blog before, you probably already know that we are big fans of desserts that are delicious, but also simple. Sometimes you need to whip up something at the last minute because you completely forgot about it, or because you are just chronically running out of time in your day (Like me. SOS).
There are many people, self proclaimed baking wizards, that will turn their nose up and scoff at the idea of store bought cake mix. It is sacrilege, a travesty! That’s fine. To each their own, I guess. Nine times out of 10 we will make everything from scratch. But, there will always be times when you want something that requires less maintenance. There are so many ways you can manipulate pre made cake mixes to create something a million times better than it would be otherwise. These cookies are one example. But I assure you, if you fed someone one of these cookies, they would never know it had cake mix in it. Promise! If loving these cookies is wrong, then I don’t ever want to be right.
Side note: Is this the 87th drizzle picture in this post? Yes. We have been trying oh so hard to master the art of a good drizzle picture. Not quite there yet, but getting better!
Aside from baby giraffes, and Netflix Original shows, cake mix cookies have become one of my favorite things on this earth. They are just so good, and pretty much fool proof. They bake up quickly and perfectly. They are soft and chewy and wonderful, and they actually bring me joy. I don’t know guys, there is just something about a perfectly baked cookie that makes me want to run through a field of daisies in slow motion with a stack of cookies in each hand. Am I alone in this?
Another reason these cookies are the bomb: It typically only requires you to dirty one bowl. Which, you probabaly also already know, is something we really appreciate. Washing dishes= MISERY.
UGH, these cookies are just good, and the vanilla glaze drizzle on top adds the perfect balance of sweet to the tartness of the lemon. The fact that the cookies are yellow doesn’t upset me either. SWOON. These cookies are like Bam! Springtime! It’s here!
And there you have it. Lemon cookies. Made from cake mix. Make them, eat them, make them again, eat them again. The circle of life. ENJOY!
