Carrot cake and cheesecake are two classic desserts that we grew up eating, and we thought why not put them together? The combination did not disappoint. But let’s be real here, could anything involving cheesecake ever disappoint?
These cupcakes made all of our carrot cake/ cheesecake dreams come true.
These cupcakes have a layer of carrot cake, with a cheesecake layer on top. All snuggled underneath a heaping dollop of cream cheese frosting.
If you’re like me and have someone in your life who adores carrot cake and would eat it every single day if he could (which he has at times), then you have also probably tried out multiple different recipes trying to find the perfect one. I’ve never found a “bad” carrot cake recipe. However, there are some that you know you will make over and over again. This is one of those recipes. The cheesecake just puts these cupcakes right over the delicious edge.
(Also, carrot cake still counts as eating a vegetable, right?)

Cheesecake just tastes good with so many things, and carrot cake was no exception.
You could also experiment and make these with a different cake flavor if you wanted.
