Do people out there really like eating carrots? Just grabbing a handful of carrots of eating them? Probably.
Not me though. I prefer my carrots in cake form. Covered in cream cheese frosting.
If you’re like me and have someone in your life who adores carrot cake and would eat it every single day if he could (which he has at times), then you have also probably tried out multiple different recipes trying to find the perfect one. I’ve never found a “bad” carrot cake recipe. However, there are some that are superior. This is one of those recipes. Because it has cheesecake on it. CHEESECAKE. Not everyone loves carrots, but everyone loves cheesecake.
I’ve never made a cheesecake before. Cheesecake intimidates me. Love to eat it. Scared to make it. Therefore, I decided to start conquering that fear in baby steps with these cupcakes. It got my foot in the cheesecake door! And it wasn’t as disastrous as I anticipated. YAY!
I will definitely make a whole cheesecake at some point. But for now, these cupcakes will do the trick. You could also make them with a different cake flavor if you wanted.
Keep these babies in the fridge and then when you eat them they will be cold, firm and delicious!
