Chocolate chip muffins. They can be breakfast or dessert. Right?
Hey guys! It’s Lindsay. Did you all have the best Thanksgiving ever? Fully stretched your stretchy pants? We hope so! This lovely 4 day weekend was exactly what we needed. All weekends should be 4 days long. What can I do to make this a thing? Can I write a letter to someone?
We had so much fun just laying around, baking, shopping, eating, thinking about cleaning but not actually doing it, and spending way too much money on Old Navy pajamas. Black Friday? Anyone? After working in retail for almost 9 years which included the ominous yearly Black Friday that was nothing short of Hell on earth, I swore I would never be one of those people that lines up to shop for deals in the wee hours of the morning. And guess what? I’M STILL NOT. I go shopping Thanksgiving night….I’m that crazy person. I got sucked into the Black Friday hype and now there is no looking back. Did I got to Old Navy 4 times in the span of 2 days? Yes….Yes I did. Did I also buy shoes that I realistically will probably never ever wear purely because of the fact that they were on sale? Also yes….And I am not ashamed! Those shoes will look really cute in my closest next to the other pair I bought on Black Friday. Because I have no self control.
Aside from all the shopping and naps, we also spent a fair amount of time in the kitchen baking up a storm. One of those baking spurts resulted in me throwing away EVERYTHING I made because they just did not turn out right. So, I pouted for a little while. Then, I went back to Old Navy to buy more pajamas. Not sponsored by Old Navy. But I really wish this was. Pajama girl for life.
HOWEVER, these chocolate chip muffins were one of the successes.
Everyone loves a good muffin. They are technically a breakfast food in my opinion. But then you can completely smother them in chocolate ganache to make them more of a dessert. It wouldn’t be a Cupcake Chronicles dessert if it didn’t involve chocolate ganache in one way or another. Am I right? Or am I right?…
If the sight of these large globs of delicious gooey chocolate makes you want to toss your cookies, then you can leave it off and just enjoy the muffins that are somewhere underneath. Ganache is just a good way to hide any muffins that come out looking a little ugly. It is like putting your hair in a braid instead of just tossing it in a pony tail because a braid looks like you tried a little bit more. But at the end of the day, you still haven’t washed your hair in 4 days.
These are just plain chocolate chip but don’t be afraid to jazz them up a little bit! You could use peanut butter chips, or dark chocolate chips, maybe even throw some pieces of fruit in there if you feel like it! Everything is good in a muffin.
