Today has been the definition of a Monday. The kind of Monday when you wake up feeling surprisingly good about the day, but then you make coffee in the Keurig and forget to put your mug underneath it. The kind of Monday where you turn around and see the wreckage unfolding, but you don’t do a single thing about it. You just stand there and watch the coffee go everywhere and think ‘Is this real? Is this really happening right now?” Yes, Lauren. It’s really happening, and now you really have to clean it up. Let’s just say that today was the kind of day where if there was even a small chance of something going wrong, it did.
I have a million things on my life to do list that I absolutely should be doing right now, but instead I am going to sit here and write about dessert because I know that it will help me to feel a tiny bit better about the shit show that is this day. Besides, nothing cures a case of the grumpies quite like chocolate. You feel me? Now, enough complaining. Let’s talk about cookies. I mean, that’s why you’re here, right? Lindsay and I have made some chocolatey desserts before, but these cookies are definitely MVP in the chocolate department. They are chocolate, with melted chocolate, and then chocolate chips. (And love of course). These are the kind of cookies where you’re gonna want to make sure you have milk handy because you’re gonna need it. They are soft and gooey and amazing. (Brief pause to recognize my deep affection for the word gooey). They are pretty much brownies in cookie form, and I’m not gonna complain about that. Aside from being magical and delicious, they are incredibly easy. No Mixer required! You may notice if you’ve read some of our other posts, we are big fans of no mixer recipes. Mostly because we are big fans of not having to do a lot of cleaning up after we make anything. Cookies that are delicious and easy? I believe that is what is referred to as a win-win, and after a day like today a win-win sounds pretty effing great. I sprinkled these with a little bit of sea salt after they came out of the oven, because apparently I’m really into sea salt lately. I am a huge fan of salty & sweet combinations, so a little bit of salt makes these cookies extra delicious to me, but you could totally skip that step if you’re not into it. You do you.
So, if you use chocolate to mend the wounds of a crappy day like we do, then you are going to love these cookies. Or if you are just a chocolate fan in general, all day everyday, then you will also love these cookies. So, give them a try! You won’t be disappointed!
Now, if you’ll excuse me, I’ll just be here, on the couch, completely wrapped in a blanket, eating cookies and ignoring anyone’s attempt at human interaction. A.K.A- a human burrito of sadness.
