Macarons attempt #2
Have we perfected the art of the perfect macaron yet? No. Not even close. However, even though we can’t get them to look quite right, we can certainly get them to taste delicious.
Hey everyone. Lindsay here. Let’s take a minute to discuss life for a minute before we start talking dessert. Is that okay? I recently moved for the first time. And let me tell you, moving sucks. You think it will be seamless and quick-ish and easy. NO. Moving is my new least favorite thing. Is it exciting to have my own place to decorate? YES. Is it also nice to have a place where I can spend 14 straight hours watching Game of Thrones on my own couch that I picked out myself? YES IT IS.
However, it has been a good 3 weeks since the move and all my decorative items are still scattered around in boxes because I’m too lazy to find places to put them. I have also had way more experience than I ever wanted assembling furniture. How do people shop at IKEA? I never want to put together another piece of furniture again.
You know that feeling when you see a beautiful kitchen island at a store and purchase it on an impulse because the lack of counter space in your new abode makes you want to weep? Then, the store clerk brings you out a shockingly small box and you realize that there is some assembly required. You think, “Ok, I’m a strong independent women. I can assemble this. I can read directions”. So, you bring it home (and call your boyfriend to help you drag it up 3 flights of stairs because it’s 100 pounds, and it turns out you aren’t actually that strong of an independent woman) Then, you dump all the parts on the living room floor and pray for a miracle.
Two hours later (with the help of your beautiful twin) you realize that your particular island is defective because there are no holes for screws where they should be, and the door on the front of the island doesn’t quite fit but you shove it on anyway because you came this far and you’re not taking it all apart and returning it. (No matter how much you probably should). Long story short, there is a lesson here. Super glue can fix anything, and I now have a pretty white kitchen island with a door on the front that I can’t open all the way or it wont close again.
But, alas! I finally have a special area just for me and all my baking stuff!
And now onto the dessert, finally.
You might remember our first macaron post from a while back. That was our first ever attempt at macarons, and this is officially the second. The reason we decided to try again was mostly due to the fact that we have a giant bag of almond flour in the cupboard that is annoyingly overpriced, and we didn’t want it to go to waste. Are there other uses for almond flour besides macarons? Probably. Will we ever use it for anything other than macarons? Probably not.
We here at The Cupcake Chronicles love anything with strawberry and Nutella. It is the best combination.

So, we had the brilliant idea to whip up these bad boys. Simply throw together some chocolate macarons, pipe some Nutella around the outside, put a dollop of jam in the center and TA-DA. You’re done.
You could use whatever kind of jam or jelly you happen to have on hand. Heck, you could completely leave out the jelly if you wanted. A chocolate Nutella sandwich!
The jelly just helps lighten the flavor up a bit.

** Note, using a silicon macaron mat comes in really handy to make sure that all of your circles are the same size, but it isn’t completely necessary.
