Breakfast. It’s the most important meal of the day. Or so they say. It is the first meal you have when you wake up. So I guess it is important. I never used to eat breakfast as a kid and it never bothered me. However, somewhere along the way in my high school career, I found myself needing to eat breakfast. Too many experiences where I would be sitting in a silent classroom and my stomach would let out a growl so loud it would sound like a mother whale calling for its young to tell them it’s time for dinner. Countless attempts to cover the turmoil erupting in my stomach by feverishly turning the pages in my notebook to muffle the sound. It never worked. My stomach was seriously so loud. Needless to say, I started eating breakfast to solve the problem.
One of my favorite things to eat on a slow, and lazy Sunday morning is cinnamon rolls. They’re warm, they’re gooey, they’re messy, and they’re delicious. Another one of my favorite things to eat are muffins. So imagine my delight when I stumbled across a recipe that combined the 2 things together! Cinnamon roll muffins. All the yes. All of it.
These are so quick and easy to make and they really do taste like a cinnamon roll! You can eat them at room temperature or you can pop them in the microwave for a few seconds to make the muffin warm, and the icing on top melted.
I know summer is right around the corner and you’re probably trying to get bathing suit ready. But you deserve a cheat day. A long, delicious cheat day. Where you eat an entire batch of muffins. Just put on your stretchy pants and go to town. You deserve all the muffins. All the muffins.
