Are you sitting? I hope you’re sitting, because we are about to hit you with one of our new favorite recipes of all time. OF ALL TIME. Coconut, caramel, and cheesecake- our 3 favorite ‘C’ words. When you put them all together, some sort of wizardry happens and you can actually hear angels singing. “Cheesecake bars,” they sing. “Cheeeeeeesecake bars.”
Alright guys. Lindsay here. Hi, how are ya? How’s life? How are the kids? How are the pets? You feelin’ good? Been working out to get ready for summer? Ok, great. Well…all your hard work is about to go to hell. We have some cheesecake bars that are full of fat and super duper addicting. Sorry.
Have I been working on my summer body? Ha. Let’s all laugh together. No, not at all. I worked out consistently for a solid 2 weeks while between jobs, but now I have turned into a couch potato who wants nothing more at the end of the day then to come home, take a bath, and go to bed at 8 pm. It’s a lifestyle. I didn’t choose the granny life. The granny life chose me.
Not going to lie, I actually made these cheesecake bars like a million years ago. Or at least that’s what it feels like. It has definitely been over a month. I almost forgot about them! HOW COULD I FORGET ABOUT SOMETHING SO DELICIOUS?!?!?! I know. I’m falling apart as a person. It’s fine. It was almost a crisis. But alas, I remembered and am posting them now. Forgive me. I can’t be helped.
Now that you are probably drooling over these pictures (I mean look at that drizzle), I will start actually telling you what these are. These are coconut caramel cheesecake bars. An Oreo cookie base, topped with cheesecake, and then topped with a coconut caramel mixture. Finished off with a drizzle off chocolate ganache, of course. #chocolateganacheislife.
I can say with 100% certainty that anything with an Oreo crust is delicious. Literally nothing with an Oreo crust has ever let me down.
These are so decadent and rich. The perfect feel good, but then feel bad, dessert. You will feel guilt, and pain in your stomach afterwards, but hey, that’s life. You will feel better eventually. Just keep eating.
Sidenote: Do not look to me to be your weight loss support system. I clearly will tell you to just “keep eating.”
One word of advice for these, make sure to let them sit in the fridge for quite a while before attempting to cut into them. They are very messy and sticky. If you don’t allow them to rest and just start hacking away, they will just fall apart. If you are going for presentation, we definitely recommend that you wait a little bit. Ideally, I would tell you to keep them in the fridge over night, however, if you don’t have the patience for overnight, try to keep them in the fridge for at least an hour or 2. Life won’t end if you cut them too early, it will just be much easier if you wait. However, if you made these just to devour by yourself because you had a bad day, then grab a fork and eat them right out of the oven in a crumbly mess. They are still delicious.
Look at those layers. (Insert heart eye emoji here). I definitely want to keep experimenting with different bar recipes. Any dessert with layers is a dessert I want to eat. I have plenty of ideas swirling around in my old noggin’ so keep your eyes peeled for new recipes.
