I love coconut. I love everything about it- the way it smells, the way it tastes, the way you have to beat it with a machete to get it open in the wild. (Not that Ive ever done that, but it looks exciting). During a recent Pinterest binge, I stumbled upon a recipe for coconut bread that I pinned a million years ago. However, like most of my pins, it just sat in my collection untouched forever and ever. I wasn’t overly interested in making a loaf of anything. Meh. Loafs? Loaves? I don’t know. Who cares. Anyway, loafs of anything don’t really get me excited about life. However, I did really like the recipe itself, so I decided to work with it a little bit and turn it into muffins instead.
I also used this recipe as a change to experiment a bit! I used coconut palm sugar for the first time ever. It is supposed to be a lot healthier for you than regular white sugar. It says on the container that it has a lower glycemic index than regular sugar. Whatever the hell that means. (Clearly I did not research this topic #lazygirlproblems) But hooray for low glycemic indexes! I substituted the coconut sugar for the white sugar in a 1:1 ratio. Considering the fact that I did not make different batches of muffins with both different kinds of sugar, I do not have a comparison on how the different sugars affect the muffins. I am very unorganized in life. One day I will get it together. Today, was clearly not that day. However, just speaking to the coconut sugar, the muffins turned out beautiful and delicious!
These muffins are so coco-nutty and delicious, and the entire kitchen smelled amazing. I won’t complain about that. These muffins are topped with a sweet glaze that add a little bit of extra yum to the muffins. It also helps if you are like me and you slightly over bake your muffins. The glaze seeps into them and helps to bring them back from the dead a little bit.
These muffins are also awesome with a slab on butter on them. Because a “slab” is a perfectly adequate unit of measurement.
