It’s time for coffee cake! If that doesn’t get you super excited, then we understand. Personally, neither one of us has ever been super crazy about coffee cake. It isn’t that we don’t like it, it’s delicious. It just isn’t something that we crave. Give us ice cream or chocolate cake any day of the week, but coffee cake-meh. It isn’t until we don’t have any chocolate cake or ice cream, and we are left with no choice, but to eat coffee cake, (usually at an elderly family friends house) that we realize how delicious it actually is. I feel like coffee cake is a very under appreciated dessert. Is it even really a dessert? Or is it a breakfast food?
Spoiler alert: there isn’t actually any coffee in coffee cake. How can you make a coffee cake a little more interesting? Fill it with the most delicious cream you’ve ever had in your life! It takes a standard, otherwise boring dessert, and takes it to the next level. Oh, and we can’t forget the thick vanilla glaze that gets drizzled all over the top. Cream filling and vanilla glaze, people. How can you go wrong? The answer is you can’t. You cannot go wrong.
And the streusel! We cannot forget about the precious streusel! If you read our post on the strawberry coffee cake muffins, then you know how passionate we are about streusel. The more streusel the better! This cake gets even better when you put it in the microwave for a few seconds, and it gets all warm and melty and amazing. Put vanilla ice cream over it if you’re feeling extra adventurous. And let’s face it- we usually are.
