Another funfetti recipe. Surprised? You shouldn’t be. Funfetti should be our last name. Lindsay and Lauren Funfetti. We just really like sprinkles. And colors. And dessert. So we blend all those things together to make funfetti everything.
Life has gotten pretty busy. Adulthood is a selfish little butthole. It is getting harder and harder to bake! There needs to be an extra day in the week just for baking anything and everything. Is that something I can petition for? Peaceful protests? Anything? I would be willing to pay at least $20 to make this extra day happen.
Until that day comes we shall continue to squeeze baking into the very few empty cracks in our time. #adultingishard
Who loves cookies?! Everyone. Who loves frosting? Everyone. Who loves sprinkles? Most people. So, I smooshed all those things together to create a super dessert. And if that wasn’t enough, I made it bright and beautiful because I like pretty things. Especially pretty things that I can eat.
I should probably tell you what the hell these actually are. Yeah Lindsay, that would be smart. Give the people what they want. The people want information.
They are sugar cookie bars. A sugar cookie, made into a bar. These are great because yeah, sugar cookies are good, but sometimes you just want a little more. A bar is going to give you more! Bars are bigger, thicker, and honestly just easier. You just smash all the dough into an 8 or 9 inch pan and throw it in to the oven. You don’t need to form each individual cookie. No one has time for that. Not when there are needy pets around that are begging for attention.

In order to get the frosting all swirly and pretty on top I ended up finding the easiest way was to put dollops of all the different colors all over the top and then just swirl it all together with a knife. If it doesn’t come out how you want you can just go back in and add more colors and continue to play with it. Trust me. I played with mine a lot. Perfectionist. Not sorry.
