Easy granola loaded with almonds, dried cranberries, coconut oil, and chocolate chips!
Hey guys, It’s Lauren. I’m not saying that this granola will change your life, buttttt this granola just might change your life.
This half loaded granola is going to change up your breakfast game, your snack game, your lunch game, the way your kitchen smells game (because really though your kitchen will smell amazing after you make this), pretty much all the games. I’m not ashamed to say that sometimes I walk into the kitchen, just to open the jar lid, smell it and then walk away. And it tastes as good as it smells.
I’ve been trying to eat like less of a trash can lately, which means salad with a side of yogurt and granola for lunch on most days. Ya know, to help balance out the 75 birthday cake cookies that I ate all weekend long. I’M TRYING. I also watched a certain documentary the other day (you know which one I’m talking about) that’s made me rethink everything I’ve ever known about life. So now I’m going through an annoying phase that I’m sure will pass the second I side eye a hamburger, or any form of bacon. But for now, it is what it is.
Is yogurt the most exciting thing in the world? HARD NO. Especially plain old yogurt on its own. Therefore, I like putting a lot of granola in mine because I need something crunchy to go with it. For me, eating yogurt is boring and basically like not eating. I need more to make me feel satisfied and less grumpy because I’m not eating a pizza instead. So, this granola is perfect! (An actual pizza would be more perfect, but I digress).
What I love about granola.
One of the things that I love the most about granola is that it is so versatile. You can add or take away whatever you want to make it the way you like it. Some people like to throw everything but the kitchen sink in theirs, while others pretty much just like oats. I think I fall somewhere in between. Hence the name, half loaded granola.
I loaded this one up with dried cranberries, almonds, coconut oil, and chocolate chips. OBVI. Classic Lauren. Take something that is healthy and good for your body and then ruin it completely. A little chocolate never hurt anyone. A little chocolate is good for the soul. So there. The little hint of chocolate in there is like the health gods whispering in my ear, “Hey. You’re doing okay. You deserve this.”
I chopped up half of the almonds, but left the other half whole. That is just my personal preference, but you could do it however you wanted. Put them in a food processor and blast them all to smithereens if that’s what you’re into. I, on the other hand, like a little extra crunch.
Homemade granola tastes so much better than the store bought kind. Not to mention, it is SO much cheaper. I make a big batch, put it in a big air tight container on the counter and just grab some whenever I want it. It’s so convenient, and I feel better about eating it because I know exactly what’s in it.
Sometimes I wish that I was one of those people that ate healthy every day and actually liked it. But then I remember tacos, and macaroni and cheese, and ice cream, and oh yeah, NACHOS. Nothing in this world will ever stop me from eating liquid cheese. NOPE, sorry. Therefore, this granola is a small way that I try to feel better about at least one thing that goes into my body during the day.
