Spring is coming. You know what that means? Lemon and blueberry EVERYTHING.
This Lemon Blueberry bread is the perfect addition to all of your Spring gatherings.
Warm weather really makes us crave fruit. ALL THE FRUIT. We start to get away from the heavier, soul warming winter desserts, and start playing with lighter, more summery flavors. One of those flavors is lemon. Another one of those flavors is blueberry. A third one of those flavors is lemon and blueberry mixed together. And that is what we are talking about today!
It was actually Spring here for about 2 weeks. The flowers were blooming, the sun was shining, sneezing was at an all time high, Lindsay got a super unattractive tan line on her legs from the day she wore capris for a bit too long. It was beautiful. Now, it’s been raining for like 2 weeks straight and the weather men have hinted at snow. I got a sunburn, and now I have to pull my scarf back out of the closet. Well Mother Nature, you are sneaky, but we are staying in the Spring spirit anyway!
We love Spring. Aside from all of the rain, and our complete refusal to carry around an umbrella, it is one of our favorite seasons. The flowers start to bloom, we can open the windows, I can force Lindsay to go on excessively long walks with me against her will while she complains the whole time. It’s great.
There is also something about the warmer weather that makes you want to try to get your life together. De-clutter your space, clean out your closet, test all of your pens to see if they work, try not to eat like a trash can (unsuccessfully). Guys, I went to the gym last week. One time. Did very little actual work. I’m basically a whole new person at this point.
With the Spring season also comes a whole new variety of desserts to try. This lemon blueberry bread is not something we had ever made before. I am personally kind of picky when it comes to blueberries. I love the taste of blueberries and anything that has blueberries in it. Hooray anti-oxidants! However, I can’t just eat a plain ol’ blueberry. It kind of makes me cringe when I see people pick a blueberry fresh off the bush and put it in their mouth. My nephews can eat them right out of a bowl like they are candy. I’m sorry, guys. I love you little suckers to pieces, but I just can’t be around you when you’re doing that kind of behavior. Obviously, I am kidding. It must be the texture or something, I don’t know, but I cannot eat them on their own. However, muffins, waffles, pancakes, bagels- load em up with blueberries and I am happy as a clam. This bread is no exception. It is sweet, fruity and delicious. The blueberries are very much the star of the show, but they don’t punch you in the face, which is a trait I always appreciate in my desserts. The addition of the lemon adds the perfect balance that this bread needs. This is not the first blueberry lemon dessert we have made and I can pretty much guarantee that it won’t be the last. The two flavors just go together so nicely!
