They may look fancy, but these mini pistachio pavlovas are actually incredibly easy!
Remember when we said winter was officially here? Well now it is officially, officially here. We got our first snow storm of the season bringing our first terrifying driving experience! Yay. You know what we did not get though? A snow day. Adult snow days should exist. Kids don’t have to go to school. So why should us adults have to drag our butts to work in the treacherous conditions!? WHY?
Also, in case you did not know, Christmas is 2 weeks away. TWO WEEKS. Where the hell did 2017 go? This has been a crazy year with a lot of changes and new things happening. Good things, but still things. I have been happy, sad, stressed out, more stressed out, hungry, anxious, frustrated, and everything else in between. Sometimes life makes it hard to find time for blogging, but have no fear, we plan to go FULL SPEED AHEAD for 2018. We bought planners for crying out loud. Will we ever look at them and see all the things we have written down? Probably not. But we are trying!

What we have here today are mini pistachio pavlovas! What exactly is a pavlova? Who really knows. Essentially it is meringues filled with other good stuff, and topped with even more good stuff. I think. That is what these are anyway. Meringues are a bit strange. It is an egg white base that gets crispy on the outside, but stays soft and chewy on the inside. Science, people! Along with being melt in your mouth delicious, they are also pretty easy to make.
I absolutely love these because they are so easy, yet they look so sophisticated. You can dress them up in so many ways. I decided to go the Pistachio route because believe it or not, we have never made a dessert with pistachios before. Ever. In our lives. I have never even bought pistachios.
They’re nuts…that you have to shuck! Peel? What is the proper term I am looking for. Needless to say these Pistachios fought me. I spent way longer than I wanted trying to get the nuts out of their shells. Some nuts I just had to leave behind because I was too weak to break them open.
Don’t worry. I just got a new gym membership that I will probably never use. So I will remain the same weakling in the new year.
I love the green color that pistachios bring to any dish and they also happen to go really well with chocolate. As does everything else in the world. I kind of just free styled this dessert and went where the sugar took me. The meringue is really light, so I wanted to stick with a filling that was also light. Which is why I went with whipped cream. You could make your own or just use store bought. Either would be delicious. Then I topped with chocolate ganache and pistachio pieces. They are a light and airy dessert but the chocolate ganache gives you the thick chocolate decadence that a good dessert needs. I hate the word decadence by the way….but it is necessary in this situation.
If you do not like pistachios you could use any nut you want. Almonds would be really great. Also pecans, or walnuts. Nuts, Nuts, Nuts…It is fun to say nuts multiple times in a row.
One thing I will say about these desserts is that they are best eaten right away. If you put them in the fridge they get very, for lack of a better word, moist. The meringue goes from being crispy, to soft, and nobody wants a moist merengue. So, keep that in mind if you plan on making these for a get-together. I would recommend making the meringue nests ahead of time if you need to and keeping them in a dry place, and then assemble right before serving them.
