Simple and beautiful neapolitan cupcakes!
Has it been a literal 2389 years since we posted a cupcake recipe? Yes. Ironic, right? Seeing as how we are “The CUPCAKE Chronicles.” Sorry about that. We got held up on the cookie train for a while there. BUT WE ARE BACK WITH SOME CUPCAKES. And also more cookies next week….BUT let’s give our undivided attention to cupcakes right now.
Before we jump into it though, let’s jut recap the events of this particular day. We started the day by making a shopping list of required ingredients. Great. We went to the store and bought those ingredients. Awesome. We come home, start the process and realize we do not have cocoa powder. Back to the store we go. FUN. Get home, start again. “Hey Lauren, where are your eggs?” “bad word, another bad word, multiple bad words”. BACK TO THE STORE AGAIN. Long story short. Make sure you double check before you go to the store. OR you are going to go to the store 3 times in the span of 15 minutes.
Alright, back to business!
Raise your hand if you are a terribly indecisive human being like the two of us! Raise your hand if you are also sitting on the couch eating cheese doodles even though you already brushed your teeth because in your mind YOU CAN’T EAT MORE SNACKS AFTER YOU BRUSH YOUR TEETH because you like went to all that work to get up, and walk to the bathroom, and brush them! So you don’t wanna have to do it all over again. Raise your hand if you also just brush your teeth sometimes to prevent yourself from eating more junk even though it never actually works. Please tell me I’m not the only one. Cheese dooods, everynight.
Point being, sometimes you shouldn’t have to decide. Have everything you want. Whenever you want it.
These cupcakes combine chocolate, vanilla, and strawberry in the most perfect way that you’ll be glad you didn’t have to choose just one flavor. We started with a chocolate cupcake for the base. Then we topped it with a white chocolate buttercream, and we finished them off with chocolate covered strawberries. Just because. SO THERE. Chocolate, strawberry, vanilla all layered into 1 yummy treat.
Side note: Record low temperatures this weekend and I still do not have working heat in my apartment. SEND HELP. And pumpkin donuts. Donuts would at least make the cold a little more bearable! Have a great weekend!
