Breakfast is the most important meal of the day. Or, so I’m told. I, Lindsay, disagree. I think dessert is the most important meal of the day. It’s the meal that you wait for. You suffer through all of your vegetables so your mom will let you have some cake. You work for your dessert because you love it so much! That is why I decided to combine the two things together! If I have to eat breakfast..I’m going to eat it in cupcake form.
I’ve always wanted to try and make these. Mostly because it gave me an excuse to make itty bitty baby pancakes as cake toppers. EEEEEEEEE. So cute. The best thing about this recipe is that it uses pancake mix from the store. We used Bisquick but any pancake or waffle mix will do. The batter I used to make the actual cake is the same exact batter that is used to make the baby pancakes. This means the cupcake is literally a pancake. A PANCAKE CUPCAKE.
I was a little worried about these guys because I wasn’t sure how they were going to rise. They rose like a dream though! Probably the most perfect looking cupcakes I’ve ever made!
I haven’t talked about the baby pancakes enough. I feel for them the way grandmas feel about their grandchildren. They’re so cute I just want to pinch their little cheeks until they are red with pain and embarrassment. In order to make them tiny but still circular I used a plastic dispenser tube. Same tube we use to drizzle chocolate ganache or anything else that’s liquidy and delicious. I first started making them one at a time. I don’t know what the hell I was thinking. I was so nervous about burning them I didn’t feel responsible enough to handle multiple at a time!
Spoiler alert-I burnt most of them. Like 90% of them. They are just so little, and they cook so fast! I honestly didn’t even use most of them. I made like 6555 of them and only used 12. I just couldn’t stop. So, now there is a giant bag of them in the fridge that no one is eating. Why? Because they are too cute to eat! Or maybe because they are burnt…who really knows.
If you don’t need a million little pancakes you can always use some of the pancake topper batter and make a couple more cupcakes with it since the batter is the same for each.
Another spoiler alert- Maple syrup is expensive, but also necessary. I debated using regular syrup. The sugary stuff that tastes artificial but oh so good. But then I remembered my time at the State Fair at the syrup booth where the lady fed me real maple syrup and artificial syrup and asked me to tell her which one was which. Challenge accepted syrup lady. It was so obvious. I am a food genius. You cannot fool me! Real maple syrup is so much better. THEREFORE, me, a poor college student, spent the $8 on the real stuff. I did it for the cupcakes!
Long story short, these cupcakes are cute. Real cute. Worthy of a good pick up line at the bar, if you were single, and also into dating cupcakes.
Not to mention, these are literally pancakes and pancakes are literally breakfast. Soooo……
I’ll let you make your own breakfast choices. *nudge nudge, eat a cupcake.
