Incredibly soft peanut butter cookies loaded with dark chocolate chunk pieces.
I am sitting here in actual awe at the fact that we’ve had this blog for over a year now and we’ve NEVER POSTED A PEANUT BUTTER COOKIE RECIPE. Who are we, and what the hell are we even doing here? Do we even bake? My deepest heart felt apology goes out to all the peanut butter lovers out there.
Peanut butter has become an every day part of my life, and I typically eat it at least once a day. Sometimes on waffles, sometimes on toast, sometimes on a knife that I plunge into the jar several times. Today at work I actually uttered the words to my co-worker: “Are we past the point in our relationship where you won’t judge me if I eat peanut butter with a spoon at my desk?” Thankfully, I got the response “Girl, you go right ahead.” So, I did. Annnnnnd I loved every second of it.
When I discovered these peanut butter cookies loaded with chocolate chunk pieces it was love at first sight. Every piece of chocolate peeking out of those cookies tugged on each of my heart strings individually. I knew that I needed them in my life PRONTO, so I went out the next day and got everything that I needed.
I am pretty sure that I say this every time I make a new cookie, but this time I really really mean it… These are my new favorite. LOOK OUT.
Lindsay and I both prefer chocolate chunks to chocolate chips. We like the random unsymmetrical-ness of it all. We like to throw a few extra on top of each cookie before we bake them to add a little bit of extra chocolate love. I used dark chocolate because I have a soft spot for dark chocolate. (My body also has a lot of soft spots now thanks to all of these cookies that I ate.)
I made a million of these little guys. Knowing that I didn’t need a million cookies side-eyeing me every time I walked by the kitchen, I brought them to work to share. Let’s all laugh together. The entire container sat next to me at my desk as I ate them like potato chips. I wish I were kidding. At one point I had to beg my co-worker to take them away from me because I couldn’t be trusted to not put myself into a diabetic coma. But, at least the cookies actually made it to work. That’s a step in the right direction, I guess.

**Note-I like to sprinkle pretty much every cookie I make with sea salt after they come out of the oven. I’m a salty+sweet fanatic, and I refuse to change, but that step is entirely up to you.
