Hey guys. In case you didn’t know, it’s pumpkin awareness month. Not really, but it might as well be seeing as how we have yet another pumpkin recipe for you. We can’t help it. We are officially in the Autumn spirit, and we are just too excited to stop. Don’t worry, the madness will end soon. Or maybe it won’t. It probably won’t. However, if you like pumpkin, then stick around, because this might be my favorite pumpkin dessert ever.
Fall has officially graced my life with its presence, and now I am all fall all the time. Just give me crispy leaves and pumpkins and sunflowers and lock me in a room with them for the next month, because that’s pretty much what I’ll be doing anyway. You know it’s getting serious when I buy an excessive amount of mini pumpkins to decorate every area of my life with, and this weekend it happened. I grabbed as many as my weak lanky arms could carry, and scattered them all over my room, and my office at work. That, in addition to the fact that it was actually cold enough for me to wear a sweater this weekend means that I am a happy Lauren. To truly celebrate the Autumn season in the best way I know how, I made a dessert, and I think you’re gonna like it. You may even fall in love with it. *Wink Wink. #sorrynotsorry
Today I have for you Pumpkin cream cheese muffins with a maple syrup icing! AKA-‘dope ass cupcakes’, AKA ‘the best thing you’ve ever made’. They’ve been referred to in a lot of different ways since I made them, but the overall consensus is that they are really damn good. I think these muffins might be one of my favorite things that I’ve ever made. And I’ve made a lot, so that’s saying something. I brought a tray of them to work, and they were gone in about an hour. So, that’s a pretty good sign, right?
These muffins are delicious. Not just because they are full of pumpkiny, cream cheesy goodness, but because they are piled with a mountain of streusel and maple syrup icing. Those that know me, know that I love streusel. I fricken love it, and I refuse to eat a muffin without it. I would put that shit on everything if I could. But, I also love maple syrup. I don’t love paying for maple syrup (WHY ARE YOU SO EXPENSIVE?!) But, it was so worth it. Together, these muffins pull at the strings of my heart and make me wish it could be October for ever and ever.
