Hi, it’s Lauren, and I have a confession to make. I have found myself in a deep, and serious love affair with cookies. All shapes, sizes and flavors. We are very happy together, thank you for asking.
Everyone loves cookies (me especially), and I want to make ALL THE KINDS. The first stop on this journey had to be these red velvet cookies. I mean, come on. LOOK AT HOW BEAUTIFUL AND RED THEY ARE. Like my heart, and the undying love I have for them.
These red velvet cookies are soft, they are easy, they are beautiful, and oh yeah, they taste pretty darn good.
These cookies are made with cake mix, and that’s one of the reasons we love them so much. I know that there are people that are 100% anti-cake mix in all forms. No excuses, cake mix is the enemy. We are not those people. Have you ever tried a cake mix cookie before? Or are you judging them prematurely? Just try it one time, and then we can talk. I made a bunch of these guys and they were a huge hit. I actually brought them to work and managed to share them with others. (I’m getting better at the sharing thing). These cookies barely lasted an hour, and I’ve already been asked to make more.

These are great with white chocolate chips, but you can leave those out if you aren’t a fan. They would also be good with cream cheese frosting on top. OH my word someone please make these with cream cheese frosting! And then send me one. Many thanks.
