Welcome back. Grab some tea, or coffee, change into your stretchy pants and have a seat. We are going to be talking about cupcakes today.
Not just any cupcakes. Cupcakes topped with cinnamon rolls. Not just any cinnamon rolls. Cinnamon rolls that I put in the waffle maker. Once upon a time Lauren bought me a book about all the different things you can make in a waffle maker. I am pretty sure I have talked about this book before in our Waffle S’more post. Anyway, there are so many different things you would never think of that you can make in a waffle iron. Cookies, sandwiches, pie. And cinnamon rolls.
One day, while sitting around doing nothing, as I usually do, I had the the thought to make cupcakes topped with a miniature version of something else. Why? Because cupcakes are already a mini version of something and what is cuter than a mini version of something topped with a mini version of something else? NOTHING. I had the idea to use cinnamon rolls for a couple reasons.
The first: I could buy the dough already made at the store. Saving me time, effort, and a headache when it goes horribly wrong.
The second: Cinnamon rolls are delicious.
The third: I really just wanted to eat the icing that comes with the cinnamon rolls, because it is so damn good.
If you were feeling extra ambitious you could totally make your own cinnamon roll dough and then waffle that. Go for it. It is going to take longer, but if you have the time and the energy, I first need you to tell me how you have the time and energy. Sincerely, someone who is forever busy and tired.
For this recipe I just made some simple chocolate cupcakes and topped them with a salted caramel buttercream. Salted caramel may intimidate you. I will admit, homemade caramel is very intimidating. It is very needy and has to be constantly stirred and watched. It is the middle child of dessert garnishes. This recipe is pretty simple though. Trust me, Lauren and I have had plenty of failed attempts with other caramel recipes. We are talking soupy caramel that never gets thick, and caramel that gets so thick that it burns and creates a permanent ring of burnt sugar in your saucepan. So if we are telling you a caramel recipe is easy, you can trust that it is easy.
As far as the cinnamon rolls on top, just take your individual cinnamon rolls, homemade or store bought, and cut them into 4 pieces. Then just put them in the waffle iron a bunch at a time and let them cook. It doesn’t take long in the waffle iron at all. About a minute. Then you will have cute mini cinnamon roll waffles. Awwww.
Then you just plop those little cuties on top of your cupcakes and drizzle them with the icing! That icing though. So. good. I want to buy it by the tub full and just eat it with a spoon.
Disclaimer: waffle irons are a real SOB to clean. You need the precision of a Q-tip and the patience of a saint to get into all the little cracks. It is not fun. It is not fast. You will not enjoy it. It’s worth it though to have cute little cinnamon roll waffles. Right? You’ll find out.
