I feel like it has been a while since we made a cake. Am I right? Am I wrong? I don’t know. Either way, I really felt like making a cake. Mostly because I really felt like eating a cake. I had a brilliant idea to make a s’more inspired cake. More importantly, I had a brilliant idea to give the cake a graham cracker crust.
The first time I ever used a graham cracker crust was with our Pumpkin Pie Cupcakes . I never before thought of putting a crust at the bottom of a cupcake, but it was so delicious. I decided all desserts should have a graham cracker crust at the bottom!
I really wanted there to be a graham cracker component to this cake because the graham cracker is the main component of a s’more. Since the crust worked with a cupcake it should work with a layer cake too right?? Ideally, I wanted all the layers to have a crust, but realistically, the crust would have made the layers too heavy, causing the cake to smoosh down. Therefore, I only put a crust on the bottom layer. How many times can I say the word crust?
The next 4 images are the slow drooping marshmallow that kept sliding down farther and farther. I thought it was beautiful. Nothing better than a gooey dessert. Prepare to receive your free stress relief.

The frosting is a graham cracker buttercream. I slathered that all over everything and then went to town with the garnishments on top. I drizzled chocolate ganache on top because…chocolate ganache is life. I then plopped a generous dollop of marshmallow fluff on top and let that melt and do it’s thing. Then I just slapped on some mini marshmallows, chocolate pieces, and leftover graham cracker crumbs. If you wanted to get fancy and own a kitchen torch, you could light up the top of this and get a nice brown color on the marshmallows and fluff. We really need to get a kitchen torch.
This cake is a great way to get you through these (hopefully) last few weeks of cold winter weather.
It is also super messy like an actual s’more. So that’s always good in my book.
