Talkin’ about turnovers today!
Do you ever try a new dessert and expect it to go horribly wrong? Then your’re surprised when it actually works? That was these. It was my first time experimenting with puff pastry and I gotta say, I was not disappointed.
Now, when I say I experimented with puff pastry, that does not mean I made puff pastry from scratch. That is a task I have yet to take on. I figured I would ease my way into that by first dabbling with the frozen stuff. I did not plan on these. I went to the store with a completely different idea in mind. I ended up in the frozen dessert section and happened to look over and see puff pastry. I grabbed it. Didn’t even get what I came for. Story of my life.
I unrolled the puff pastry and cut it into 6 even squares. Or what I thought were squares.
That way I could easily fold them over to make little triangles.
Best way to ensure you get even squares? Measure the damn things. I did measure. I swear. But I guess I did a horrible job. Because they ended up more like rectangles. Whatever, doesn’t matter. They still worked out okay.
Smear your fillings on one half of each square, fold them over, take a fork and press all the edges together, brush the tops with an egg wash, then bake until pretty golden brown.
Strawberry cheesecake turnovers.
Oh yeah, then drizzle them with a vanilla glaze and attempt to drizzle while simultaneously taking a photo of the drizzle all by yourself. So then the drizzle ends up more like a blob than an actual drizzle. Because it is hard to drizzle with your non dominant hand. But you need your non dominant hand to take the picture because you don’t own a tripod. So you end up with a photo that is blurry and not at all centered. But you use the photo anyway because it is the best you could do. And your’re trying real hard to get the perfect drizzle photos, but until then you have to settle for the not so perfect drizzle photos. Life is hard. Drizzle photos are hard. I just said drizzle 487 times. Help.
I will admit, there isn’t a ton of filling in each one of these turnovers. They are still delicious, but if you want a little more I would double the filling recipe and do more than just a smear in each one. All depends on your filling preferences. Whatever amount of filling makes you happy.
