Strawberry galettes that are delicious, easy and beautiful.
We’re back! Sorry about our brief hiatus last week. We have no excuse. Life. But, we are back and we brought these cute little strawberry galettes!
You know that feeling when your significant other goes away for a business trip without you? You know, you love them and miss them and all that mushy stuff, but sometimes a weekend all to yourself is just what you need? That was last weekend for me. My other half went to Milwaukee for work leaving me to entertain myself for the weekend. I used this alone time to bake up a storm. These strawberry galettes were one of the few things I whipped up!
These cute little fruit pies are so easy and summery. Moment of silence for the 2 months of summer that came and left in about 2.3 seconds. Come back.
You can fill these little guys with literally whatever you want. You could even go savory! Clearly though, we have a thing for strawberry desserts. Is it obvious yet? These galettes are charming and rustic looking, and that is right up our aesthetic alley. Granted, mine look a little bit like a toddler made them…I did kind of a crap job with the folding up of the sides..so some of my galettes look like little dough bowls filled with fruit. But, I think those beautiful golden brown edges make up for some of the wonky-ness. Maybe? Possibly?
These are absolutely perfect for entertaining. I don’t think there is anything cuter than individual desserts for your guests. They look nice and fancy, without the hassle of actually being fancy. Sometimes you just don’t want to spend an entire afternoon in the kitchen. These galettes allow you to put a little bit of love in each and every one of them. (Or at least you can just pretend to add the love. We’ll never tell).
When cutting the pie dough you can use round cookie cutters like these, or you can get inventive with stuff around your house. I used the lid from a peanut butter jar to cut the circles. It all depends on how big you want your desserts to be.
Top these babies with a scoop of vanilla ice cream and you are well on your way to hostess of the year. Pie without ice cream is like chips without salsa. What is even the point? Life deserves salsa. You deserve salsa. To make a long winded story short, ice cream is always a good idea.
