Cake. We love it. We eat it. We secretly hate how long it takes to make. Are we right?
Sheet cakes are highly underrated. When you think sheet cake you probably think store bought kids cake with the weird whipped frosting. No one talks about them. They barely ever get made. AND NO ONE EVER THINKS TO DECORATE THE TOP. Seriously. A sheet cake is a giant, rectangular, BLANK CANVAS. Which is why we decided to treat this like one and paint on our buttercream. YUP. We used palette knives to make these flowers look like they were painted on!
You can find palette knives in the paint section of basically any craft store. They even sell cheap plastic ones. We got our palette knives on sale at Hobby Lobby for like $5. But here are some cheap ones you can get on Amazon! https://amzn.to/2NXvntA
This cake is really light and fluffy but topped with a rich and thick buttercream. Feel free to substitute the vanilla for some chocolate buttercream for a chocolate on chocolate cake.

Chocolate Sheet Cake
Ingredients
For the cake
- 2 eggs
- 1/4 cup sour cream
- 3/4 cup buttermilk
- 1/2 cup vegetable oil
- 1 TBS vanilla
- 1 1/2 cups flour
- 1 1/2 cups sugar
- 1 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 3/4 cup hot coffee
Vanilla buttercream
- 2 sticks unsalted butter softened
- 1 TBS vanilla extract
- 4 cups powdered sugar
- 2-3 TBS milk or heavy cream
Instructions
For the Cake
- preheat oven to 350 degrees F. Line a 9X13 baking dish with parchment paper.
- In the bowl of a stand mixer beat together the eggs, oil, sour cream, buttermilk and vanilla. Slowly add in the flour, sugar, cocoa powder, baking powder and baking soda. Slowly pour in the coffee. Batter will be thin.
- Pour into baking pan.
- Bake for 25-30 minutes or until toothpick inserted comes out clean. Let cool completely before frosting.
Buttercream
- Beat butter in a stand mixer until smooth and light. Slowly add in powdered sugar. Add in vanilla. Add in milk until desired consistency is reached.
Assembly
- Once cake is completely cool, cover with frosting.
