These marshmallow cookie bars at soft, gooey and swirled with marshmallow fluff!
Happy Friday! Time flies when your stuck inside amiright?! Nope. That’s wrong. That’s definitely wrong. However, I hope you are all finding ways to keep busy. I believe that you can either mope around the house just waiting for the okay to start doing things again OR you can take all of this quaran-time you have and get creative. Try things you never used to have time to try. Experiment with things. Who knows, you may just accidentally stumble upon something new that you actually really enjoy. I imagine everyone emerging from this whole thing with a whole lot of brand spankin’ new hobbies and passions and I think that is pretty darn cool.
As we speak I am currently waiting for the oven to preheat for the…wait for it….BREAD I AM MAKING. Perfect example of what I was just blabbing about. Always wanted to make it. Never wanted to waste my time trying it. Now, I’ve got nothin’ but time and in about an hour i’ll have a homemade loaf of crispy, crunchy delicious Italian bread. Fingers crossed.
As we all know, I have been on a bit of a baking rampage lately. Again, time. Last Sunday I made waffles, and then cheesy garlic biscuits, and then these ooey-gooey bad boys. I scaled back and made a small batch because well..self control and the fact that I had a million biscuits that I literally just made beforehand. I love how these darn things turned out! They were made in a standard-sized loaf pan so depending on how small or big you cut them, you get about 8 smaller sized bars which is a much more manageable amount in my opinion.
Just like all of our recipes, these are extremely customizable. You can just use chocolate chips or you can get crazy like I did and swirl in some marshmallow fluff. Nutella would also be incredible…
You want to make sure that these come out of the oven slightly under-baked. That is what makes them so amazing. They will continue to cook in the pan as they cool so don’t be afraid if they still seem really soft when you take them out of the oven. This recipe is so quick and easy that it is the perfect thing to whip up next time you are bored…which I imagine will be pretty soon.

Marshmallow Chocolate Chip Cookie Bars
Ingredients
- 3/4 cup flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 cup brown sugar
- 2 tbsp granulated sugar
- 4 tbsp butter room temperature
- 1/2 tsp vanilla extract
- 1 egg
- 1/2 cup chocolate chips
- 3 tbsp marshmallow fluff
Instructions
- Preheat oven to 350 degrees F. Line a standard loaf pan with parchment paper.
- In a bowl, mix together the flour, baking powder and baking soda, set aside.
- In a separate bowl, beat together the butter, sugars and vanilla until light and fluffy. Add in the egg and continue to mix.
- Slowly add in the dry ingredients and mix until a dough forms. Stir in the chocolate chips.
- Press the dough into your loaf pan. Place 1 tablespoon of fluff on each end and 1 tablespoon of fluff in the center and swirl with a spoon.
- Bake for 15-18 minutes until the edges are browned.
- let cool for 10 minutes before removing from pan.
