These caramel stuffed cookies are full of chocolate chips and a sticky caramel! The perfect twist on the classic chocolate chip cookie!
Hey everyone! Ready for more cookies?! We certainly hope so, because we can’t stop making them.
In case you were wondering, we are still over here baking up a storm. A literal storm. There is flour everywhere. EVERYWHERE. Cookies are one of those comfort desserts that are so easy to make and so satisfying to eat. These are no exception. Especially since we went a step above and stuffed them with caramel.
Spoiler alert: you can stuff a cookie with just about anything. These may look complicated because…how in the heck do you stuff liquid caramel inside of a cookie?! We used Werther’s soft caramels. You take your ball of cookie dough and you just shove a caramel candy on the inside and them form back into a ball so the caramel is covered. ta-da! Alternatively, you could just press the caramel to the top of the cookie dough ball so the Carmel melts on top. You do you! We tried both methods as seen in some of the pictures. Both taste equally delicious.
We hope our baking escapades bring you some type of joy during your quarantine. If not? That is okay too! There is no rule that you need to be productive during this time. If binging Netflix and and taking some much needed time for yourself is what you feel like doing, then do it! These are weird times. Handle them however the heck you need!

Brown Butter Dark Chocolate Chip Cookies

Caramel Stuffed Chocolate Chip Cookies
Ingredients
- 1 1/3 cup flour
- 1 tsp baking soda
- 1/2 tsp cornstarch
- 1 stick unsalted butter room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 egg
- 1 cup chocolate chips
- 1 package Werthers Soft caramels
Instructions
- preheat oven to 350 degrees F and line a cookie sheet with parchment paper
- Melt butter in the microwave until very soft and almost completely melted. 30 seconds at a time.
- In the bowl of a stand mixer beat together the sugars, vanilla and butter. Mix for 1 minute.
- Add in the egg and mix until combined. Scrape down the sides of the bowl.
- In a seperate bowl mix together flour, baking soda, and cornstarch.
- Slowly add the dry ingredients into the wet ingredients. Mix until a dough forms.
- Fold in the chocolate chips
- Using a cookie scoop, form balls and stuff a Werther’s soft caramel in the center of each ball. Reform the ball so the caramel is covered by dough. Place ball on cookie sheet.
- Bake for 10-13 minutes depending on how done you like your cookies
- Let cool on pan for 5 minutes and transfer to a wire rack.
