These quick and easy chocolate strawberry cookies are made with cake mix and are just like chocolate covered strawberries in cookie form!
What are chocolate strawberry cookies
We are back on the cake mix cookie train with these super easy chocolate strawberry cookies. Our inspiration for these cookies were chocolate covered strawberries, so they are half strawberry, half chocolate, and then drizzled with melted chocolate after they bake.
What do you need to make these cookies
- Strawberry Cake Mix (any brand will work!)
- Chocolate Cake Mix (any brand will work!)
- Vegetable Oil
- Eggs
- Semi Sweet Chocolate Chips
That’s it. No really. These couldn’t get any simpler!
How do you make these chocolate strawberry cookies
The first thing you need to do is get 2 medium size bowls, because you want to keep each flavor of dough separate. For each flavor you will mix the cake mix, 2 eggs, and the vegetable oil together until combined. The dough is going to be THICK, so it’s a lot easier to mix with a hand mixer.
Once you have your doughs made, pop both of the bowls into the fridge for an hour so that the dough can chill.
Once your dough has been chilled, use a 1 inch cookie scoop (or a regular spoon) to make dough balls of each flavor. You’ll need one scoop of each flavor per cookie.
Then, take 1 strawberry dough ball and 1 chocolate dough ball and gently roll them together to form one ball. Bake these little cuties at 375 F for 9-10 minutes. They will look slightly underbred when you take them out of the oven, but that’s okay! They will continue to bake as they sit on the baking sheet.
Once your cookies are nice and cool, you can prepare the chocolate drizzle. Use a double boiler method with a bowl over a pot of simmering water to melt the chocolate. We are huge advocates of the double broiler method. You can also use the microwave, but using a double broiler gets the chocolate a lot more silky and smooth, trust us.
Drizzle the magical melted chocolate over all of the cookies and they are ready to eat!
The thing we love the most about cake mix cookies (besides the simplicity), is that the possibilities are really endless! Chocolate and vanilla would be a good combo. Strawberry and funfetti. Vanilla and strawberry. Anything. You can take just about any flavor of cake mix and transform it into cookies.
These keep at room temperature for up to 5 days. Keep them in an airtight container.
No problem! If you don’t have a cookie scoop you can use a tablespoon measure or just a regular spoon.
Cake mix cookies are just that; a little bit more cakey than a traditional cookie. If you want a fudgier cookie we recommend putting your cake mix cookies in the refrigerator. They will get a bit more dense and fudgy and be more like a brownie. SO GOOD.

Ingredients
For The Strawberry Cookie Dough
- 1 box strawberry cake mix any brand will work
- 2 eggs
- 1/3 C vegetable oil
For The Chocolate Cookie Dough
- 1 box chocolate cake mix any brand will work
- 2 eggs
- 1/3 C vegetable oil
For the Drizzle
- 1/2 C semi sweet chocolate chips
Instructions
- Pre-Heat oven to 375 F
- Using 2 separate medium size bowls, combine all the ingredients for each cookie flavor and mix until combined. The dough will be thick, so it's easier if you use a hand mixer for this step.
- Once both dough flavors are mixed, place them into the fridge for at least an hour to chill.
- Once the dough has chilled, use a 1 inch cookie scoop to create 1 small strawberry dough ball, and 1 small chocolate dough ball. Then, gently roll together the 2 dough balls so that you are left with one dough ball that is half pink and half brown. Continue this until all of your dough is gone.
- Place the cookies on a parchment lined baking sheet, and bake for 9-10 minutes.
- The cookies will look slightly underbaked when you take them out of the oven, but they will continue to bake as they sit on the tray.
- While your cookies are cooling you can prepare the chocolate drizzle. Using the double broiler method, melt your chocolate chips until they are smooth and shiny.
- Once cookies are completely cooled, drizzle the cookies with the melted chocolate and then they are ready to enjoy!
